Peanut Butter Cookies

Here is the best recipe ever for peanut butter cookies. You can use either set of measurements listed below, depending on how many cookies you wish to bake. Either way, they will go fast! My grandkids always want to make these with me. They love the process—especially the flattening part at the end. We always make the large recipe so that at the end of their time here at the ranch, they can take a bag of cookies home to their waiting parents!

I see her patience slowly fading… “Hurry with the picture! I want a cookie!”

½ or 1 cup shortening

½ or 1 cup brown sugar

½ of 1 cup white sugar

1 or 2 eggs

½ or 1 cup peanut butter

½ or 1 t vanilla

1 ½ or 3 cups flour

1 or 2 t soda

Preheat oven for 375 degrees

Cream shortening. Add both sugars and cream mixture. Add egg and beat. Add peanut butter and vanilla. Beat. Then add flour and soda. Mix well.

Roll out into tablespoon-size balls. Using a fork that is dipped in flour, make imprints in the form of an X to flatten the dough for each cookie.

Cook for 10 minutes. Once you have removed the cookies from the oven, let them sit on the pan for a minute. Using a spatula, remove and place on a platter – this makes it easy to grab one and gobble it down!!!
